It is still very crispy just like how it will turn out using a stovetop. To keep the chicken from getting soggy in the oven, you need to place them on a wire rack. This will keep the air circulating and will prevent the bottom of the chicken from being mushy. Another trick to keep them crispy is patting them dry before baking. Once they are done baking, coat the crispy chicken wings with the homemade buffalo sauce, and you have an amazing dinner meal at home. Pat the chicken wings dry, then cut them into 3 parts: tip, wingette, and drumette. Place all the tips in a ziplock bag and save them for later. Add all wingettes and drumettes in a bowl, then season with salt. Toss well.
Get a large bowl and add the flour, baking powder, salt, and black pepper. Mix everything.
Preheat your oven to 425F. Cover a rimmed baking sheet with foil up to the edges and place a wire rack on top. Spray the wire rack with non-stick spray.
Add the flour mixture to the seasoned wings and toss to coat. Place the coated chicken wings on the rack on a single layer on the prepared pan. Place inside the oven and bake for 20 minutes. Take from the oven and flip each one. Bake for another 15 minutes.
Make the sauce. Place a pan over heat, and melt the butter. Once melted, add all the other ingredients. Mix well with a whisk. Taste it as you go and adjust seasonings if needed.
Once the chicken is done, remove it from the oven and transfer to a large bowl. Pour the buffalo sauce over the chicken wings and toss to coat.
Serve with sour cream dipping sauce. Enjoy!
