Preheat your oven to 375 degrees F. Next, add 1 cup of cashews to your blender along with 3 cups of water. Blend on high until liquified. Set it aside. Next, chop your broccoli into bite-size pieces, slice some cremini mushrooms, and chop two plant-based sausages. Transfer them to a large mixing bowl and drizzle avocado oil. Toss, then transfer to a baking sheet lined with parchment paper. Bake them in the preheated oven for 25 to 30 minutes.

In the meantime, prepare the other ingredients. Finely chop one onion, two stalks of celery, and one carrot, mince two cloves of garlic, and dice 1/2 red bell pepper. Heat 2 tbsp avocado oil in a pot over medium-high heat, then add the onions and garlic. Saute for six minutes and season with 1 tsp salt, ground black pepper, and 1/2 tsp of dried oregano. Next, add the celery and carrot and saute for another few minutes. After this, add the bell pepper and saute for another minute.
Add a liter of unsalted veggie stock (or water) and 1/3 cup of nutritional yeast. Turn the heat up, stir everything, and bring the pot to a boil. Once the pot starts to boil, turn the heat off, then add the roasted broccoli, mushrooms, and sausages. Stir everything. Next, add the blended cashew and 1 cup of corn. Turn on the heat, stir, and warm the soup up for a few minutes. Serve and enjoy!
