Peppermint Patties
Chocolate Coating
Step 1
In a mixing bowl, add the sugar, butter, peppermint oil, vanilla extract, and evaporated milk, then beat them over low speed until combined, increase the speed to medium-low, and keep beating for about 2 minutes until dough forms. Place the dough between two sheets of parchment paper, then roll it until about ¼ inch thick and 8 inches round.

Step 2
Place the dough on a baking sheet, making sure it is still sandwiched between the parchment paper, then put it in the refrigerator to set for about 60 minutes or freeze for 15 minutes until cold and very firm. Once chilled, remove from the refrigerator, peel off the top piece of parchment paper, and start cutting the dough with a 1½ inch cookie cutter dipped in powdered sugar.
Step 3
Put them back in the freezer to free until firm. For the chocolate coating, add the chocolate and shortening to a heatproof bowl, then heat them until melted, and dip each frozen patties on it until well coated. Put the coated patty on a baking sheet lined with parchment paper, then put them in the refrigerator, and let them chill for about 30 to 60 minutes or until firm. Serve and enjoy!
