Preheat your oven to 400 degrees F and grease a baking tray with olive oil. Set it aside. Next, remove the stem from the mushrooms, then mince the stem roughly and set them aside in a bowl. After this, finely dice the onion and garlic cloves. Now, melt 2 tbsp butter in a pan over medium heat. Once melted, add the minced mushroom and saute for five minutes. After this, add the diced onions and minced garlic cloves. Season with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper. Stir for one to two minutes or until softened, then transfer to a bowl. Let the mushroom mixture cool for ten minutes.

In the meantime, grate your parmesan cheese, and roughly chop whole pecans as well as a bunch of parsley. Set aside a bit of the chopped pecans and grated parmesan, and start mixing all the ingredients together. In the bowl of the mushroom mixture, add the grated parmesan, chopped pecans, 4 oz cream cheese, and chopped parsley. Mix well all together.
Once done, stuff each mushroom with the filling, then place them in the prepared baking tray. After this, sprinkle the grated parmesan you set aside earlier into each top, along with the chopped pecans. Place them in the preheated oven and bake for 20 to 25 minutes.
