Step 1
Preheat your oven to 350°F, then grease a 9×13-inch casserole dish, and set it aside. Fill a large pot with water and bring it to a boil, then add the green beans, and cook them for about 5 to 7 minutes or until al dente. Strain the green beans, then rinse them under cold water until cool, and set them aside for later. Place a large saucepan or Dutch oven on a stove over medium heat, then melt the butter, and the onion and mushrooms.
Step 2
Stir and saute them for about 5 to 7 minutes, then sprinkle the flour, and stir them until well coated. Pour in the cream a splash at a time while whisking continuously until incorporated, then pour in the remaining cream along with the chicken broth, and keep stirring to combine. Let it simmer for about 6 minutes or until slightly thickened or it resembles a pudding.

Step 3
Turn off the heat, then add 1 cup of Cheddar followed by salt, pepper, and soy sauce, and give them a good mix. Add the green beans, then keep stirring until well combined, and transfer the mixture to the prepared casserole dish. If you want to serve them the next day, allow the mixture to cool slightly, then cover them with aluminum foil, and place them in the fridge to chill until ready to cook.
Step 4
Once ready to serve, remove the casserole dish from the fridge, put it on the counter at room temperature, and let it sit for about 30 minutes. When ready to cook, top it with the remaining Cheddar, then cover it with aluminum foil, and bake it in the preheated oven for 25 minutes. Remove it from the oven and take off the cover, then sprinkle the fried onions all over the top, and put it back in the oven to bake for another 10 minutes uncovered or until bubbly. Serve and enjoy!
