Ingredients:

Cake

  • 3 cups of all-purpose flour
  • 2 tsp of baking soda
  • 1 tsp of salt
  • 1 tsp of ground cinnamon
  • 2 cups of sugar
  • eggs
  • 1 cup of vegetable oil
  • 2 tsp of vanilla extract
  • (20 ounces) can of crushed pineapple, including the juice
  • 1½ cups of finely chopped pecans or walnuts, reserved some for topping
  • 1 cup of sweetened coconut flakes, optional

Cream Cheese Frosting

  • (8 ounces) package of cream cheese, softened
  • ½ cup or 1 stick of butter
  • 1 tsp of vanilla extract
  • 1 cup of sugar

Directions:

Step 1

Grease your baking pan well on the bottom and sides, then dust it with flour, and shake off the excess. In a large mixing bowl, lightly whisk the eggs, then add the oil and vanilla extract, and whisk them until combined. Add the sugar, then continue whisking until incorporated, and sift over the flour, baking soda, salt, and ground cinnamon.

Step 2

Gently fold everything together until combined, then add the crushed pineapples and coconut flakes, and continue to fold until evenly combined. At this point, preheat your oven to 350°F, keep mixing the batter until there are no more big lumps, then pour it into the prepared pan, and spread it evenly.

Step 3

Place it in the preheated oven, then allow it to bake for about 50 minutes or until a toothpick inserted at the center comes out clean, and while waiting, prepare the frosting. In a large mixing bowl, add the cream cheese, butter, vanilla extract, and sugar, then break and fold everything together until combined.

Step 4

Switch to an electric hand mixer, then continue to mix the frosting until smooth and fluffy, and spread over the cake evenly. Sprinkle the reserved chopped pecan on top, then top it with some more coconut flakes if you want, and serve. Enjoy!
