Aside from pumpkins, fall is also for apples, don’t you think? Imagine a dessert composed of apples, cinnamon, and other fall flavors; that would be terrific! So today, I’m sharing this dessert recipe from El Mundo Eats I found on YouTube. It’s everything you would want for your cookies, and the best part is that it’s filled with apples with a beautiful combination of caramel! I bet everyone will love this at first bite. Learn the full recipe in the video below.
In a large mixing bowl, add 2 cups of all-purpose flour, 1/2 tsp cinnamon powder, 1/4 tsp baking powder, 1/2 tsp baking soda, and 1/4 tsp salt. Mix well and set aside. In another bowl, combine 1/2 cup unsalted butter, 1/4 cup granulated sugar, and 1/4 cup brown sugar. Whisk until creamy texture, then add one egg and 1 tsp vanilla extract. Continue to mix until combined. Once done, fold in the flour mixture until just combined. Set aside.

Next, finely chop one medium-sized Granny Smith apple and add them to the mixture. Mix well. Now, grab a scooper and scoop 2 tbsp of dough onto your palm. Flatten it a bit, then place one soft toffee caramel in the center. Wrap the caramel properly into the dough, then place it in a parchment paper-lined baking tray. Continue this until you finish the dough mixture. After this, place the baking tray in a preheated oven at 350 degrees F and bake the cookies for ten to fourteen minutes or until they’re fully baked. Once done baking, let them cool a bit, then serve. Enjoy!
