This Doritos casserole dinner recipe by Catherine’s Plates is a delicious dish filled with beef, tomatoes, corn, cheese, onion, garlic, and chips. It’s great for a big crowd or on a movie night at home. Give it a try – I am sure it will be on your weekly rotation.

Start by preheating your oven to 350F, then spraying a 9×13 baking dish with nonstick cooking spray.
Place a large skillet over heat and add the ground beef and onion. Break into small pieces and cook until the beef is fully cooked and the onions are soft. Once done, drain the grease.
Add garlic to the beef and onion and cook for a minute. Next, add the corn, tomatoes, taco seasoning, and 2 cups of small pieces of Doritos. Mix everything and cook for 3 to 4 minutes, then turn off the heat.
Add the sour cream and 1/2 of the Monterey jack cheese. Mix well.
Put 1 1/2 cups of broken Doritos into the bottom of the prepared dish and spread evenly. Next, add half of the meat mixture over the broken Doritos, then sprinkle 1/2 cup of Monterey jack cheese over the meat mixture. After that, sprinkle 1 1/2 cups of broken Doritos evenly, then add the remaining meat mixture on top.
Lay another layer of Doritos on top, then sprinkle the remaining 1 cup of Monterey jack cheese.
Lightly spray a sheet of foil with nonstick cooking spray, place it spray-side down on top of the casserole, and then seal the edges.
Place inside the preheated oven and bake for 30 minutes. Remove the foil, then bake for another 10 to 15 minutes until cheese has melted. Sprinkle chopped green onions when serving. Enjoy!
