Step 1
Preheat your oven to 400°F, then coat the cleaned potatoes with canola oil evenly, and place them on a half-sheet baking pan lined with aluminum foil. Place them in the preheated oven, then let them roast for about 50 minutes or until fork tender, set them aside, and allow them to cool down. Reduce the temperature of the oven to 350°F, then grease a 9×13-inch casserole dish with nonstick cooking spray or butter, and set it aside.

Step 2
Once the potatoes are cool enough to handle, cut a slit down the skin of the potatoes, then remove the skins, and place the potatoes in a large mixing bowl. Mash them using a handheld mixer over medium-high speed, then add the melted butter, sugar, eggs, milk, vanilla, and salt, and continue to beat until well combined. Pour the mixture down the prepared casserole dish, then spread them evenly, and set them aside.
Step 3
For the topping, add the flour, sugar, and salt to a medium-sized mixing bowl, then stir everything together until combined, add the cold butter, and mix them in using a pastry blender or fork. Add the chopped pecans and continue mixing until evenly distributed, then pour the topping evenly all over the top of the batter, and place it in the oven. Let it bake for about 30 minutes, then allow it to cool down slightly, and serve. Enjoy!
