Every time the Fall season comes, I always prepare pumpkin treats for my family, and one of my favorite go-to recipes is this one by JoyFoodSunshine on YouTube. What I love about this recipe is that it’s very easy to follow and the flavor is just so good that one cupcake just isn’t enough. Watch this video tutorial now to learn how.
Step 1
Preheat your oven to 350°F, then line 2 muffin tins with cupcake liners, and lightly grease them with nonstick cooking spray before setting them aside. In a medium-sized mixing bowl, add the flour, baking soda, baking powder, sea salt, cinnamon, and pumpkin pie spice, then mix them all together until well combined, and set aside.

Step 2
In a large mixing bowl, add the pumpkin, melted butter, sour cream, whole milk, eggs, and vanilla extract, then whisk them all together until combined and smooth. Add the granulated sugar and brown sugar, then whisk them until dissolved and there are no more lumps, and add in the dry ingredients. Keep whisking them until incorporated, then pour the batter into the prepared muffin tins, and divide them evenly.
Step 3
Let them bake in the preheated oven for about 18 to 25 minutes or until a toothpick inserted at the center comes out clean or the top is slightly browned or puffed. Allow them to cool down for at least 15 minutes, then remove the muffin tin, and transfer them to a wire rack to cool completely. Prepare the cream cheese frosting, then spread it on top of the cooled cupcakes, and let them chill in the fridge for at least 1 hour. Serve and enjoy!
