Southern sweet potato pie – a classic recipe that will always be everyone’s favorite! Divas Can Cook made a simple twist to this old-fashioned recipe by roasting the sweet potatoes. It created this incredible flavor that is so good when combined with brown butter.

Preheat your oven to 425F.
Using a fork, pierce your sweet potatoes several times, then place them on a foil-lined baking sheet. Place inside the preheated oven and bake for 45 minutes or until very tender. Once done baking, let them cool while preparing the brown butter.
Make the brown butter. Add the butter to a heavy-bottom skillet over medium heat. Once melted, it will begin to foam. Continuously whisk while scraping the bottom. Then it will turn golden and form golden brown bits, keep whisking. Once the aromas become nutty and the solids in the bottom are golden brown, remove the skillet from heat.
Pour the butter, including the brown bits into a glass dish, then set it aside and allow it to cool.
Scoop out the flesh of the cooled sweet potatoes and add into a large bowl. Mix until it becomes creamy and smooth. Add a splash of water or milk until it has the same texture as a very thick puree.
Add the cooled brown butter to the potatoes and mix until smooth. Next, add the brown sugar, white sugar, evaporated milk, eggs, vanilla extract, cinnamon, nutmeg, ginger, clove (if using), juice, and flour. Mix until well combined.
Pour the mixture into the pie crust shell and smoothen the top.
Preheat your oven to 350F and bake the pie for about 55 minutes. Once done baking, remove it from the oven and let it cool completely until the middle is firmly set.
Refrigerate until ready to serve. Add sweetened whipped cream or vanilla ice cream when serving. Enjoy!
