Looking for a healthy snack or appetizer? Try these fresh spring rolls by Kirbyyy! They are filled with vegetables, fruits, herbs, and protein and served with a delicious sauce. Both are light, easy to eat, and just delicious. Read on or watch the video below for full instructions.
Sauce:
Start by slicing everything into thin strips. For the crab sticks, place them in a bowl of hot water first, then cut them into thin slender pieces.
Quickly dip spring roll water in warm water and lay on a flat surface. Add lettuce on one side, followed by carrots, crab sticks, cucumber, and mango slices. Fold the end and the sides, then start rolling it. Repeat with the remaining ingredients.
Make the sauce. In a mixing bowl, combine all sauce ingredients.
Slice the spring rolls in half then serve with the sauce.

For the sauce:
Start by cooking the noodles based on package instructions. Slice the carrots and cucumber into thin strips. Cut the shrimp in half and chop the cilantro and lettuce into big pieces.
Quickly dip the wrapper in water and lay it on a flat surface. Add lettuce, vermicelli noodles, carrots, cucumber, cilantro, and shrimp on one side of the wrapper. Fold the bottom and sides, then roll. Repeat with the remaining ingredients.
Make the sauce. Combine all sauce ingredients in a bowl using a whisk.
Serve the spring rolls with the sauce. Enjoy!
