Peel the potatoes and cut into thin slices. Place in a bowl and fill it with water. Stir to remove starch. Repeat several times.
Place a deep pan over medium heat and add oil. Add the potatoes and season with salt and pepper. Mix and make sure it’s properly seasoned. Do not fully cook the potatoes, as you will still cook them later on. You can add some butter at the end.
Beat four eggs and season with salt and pepper, 1/2 tablespoon of minced garlic, 1/3 tablespoon of oregano, and 2/3 tablespoon of curry powder. Mix until well combined. Adjust the amount of garlic and curry powder according to your taste.
Add the cooked potatoes and mix until everything is coated. Set it aside for 10 minutes.
Prepare the cake mold by adding parchment paper on the bottom and sides, then apply oil to the corners.
Transfer the potatoes with the egg mixture to the prepared cake mold. Spread evenly. Cover the top with foil.
Place inside the preheated oven at 356F and cook for 30 minutes.
Remove from the oven and sprinkle grated cheese on top. Melt the cheese in the oven at 356 Fahrenheit for 15 minutes.
Remove from the mold and sprinkle chopped parsley on top. Slice and serve with salsa. Enjoy!
