Start by slicing 2 kiwis in half then cut each into thin slices. Set 9 slices aside, and the remaining on a different plate. Next, cut the remaining kiwis into cubes and transfer to a bowl.
Blend the kiwis in the bowl until smooth, then put in a saucepan. Add 1 tablespoon of sugar and mix until well incorporated. Place over heat and let it simmer for 5 minutes, stirring occasionally. Once done, let it cool down completely.
Turn the vanilla cake or muffin into bread crumbs by tearing it into small pieces. Place in a bowl, then set aside.
In a different bowl, add the cream cheese, 2 tablespoons of sugar, and 1/2 teaspoon of vanilla extract. Whisk until well combined until there are no lumps. Next, add the whipping cream and whisk until stiff peaks form.
Add the cooked and cooled kiwi puree to the whipping cream and gently fold. Transfer the mixture to a piping bag.
Set up the kiwi slices, breadcrumbs, and glasses. Stick some kiwi slices on the side of one glass and add some breadcrumbs. Press it gently, then add a kiwi cream layer. Repeat the kiwi, breadcrumbs, and kiwi cream layer. Garnish with mint leaves on top. Refrigerate for 1 hour before serving. Enjoy!
