Start by slicing the avocados in half and removing the pit. Next, scoop them out and place them in a bowl. Mash it a little bit with your fork. You can also blend it if you want it to be smooth. If you don’t want it mashed, you can just cut them into small pieces.
Squeeze the juice of a lime or lemon on the avocados to avoid browning. Make sure there is enough lime juice. Mix until well incorporated. It should taste a little bit tangy. You could add tomatoes or onions now or later on. You can also season them. Just like with the mashed avocados, sprinkle lime juice on the avocado cubes.
Transfer to a baking sheet and spread it evenly. The thinner layer you make the faster it’s going to freeze dry. You can use a spatula to spread it easily.
Place in your freeze dryer. Turn on the start button, hit not frozen, then continue.
Once it’s ready, hit the warm button to bring the temperature of the trays up a little bit to room temperature so you don’t get condensation and moisture back. It will take about 15 minutes. After that, push the defrost button on the machine and release the vacuum seal.
You can transfer the cubes directly to the jar, but for the mashed avocados, break them into pieces first, then vacuum seal them. Keep them from direct sunlight.
To use the cubes, you can add a little bit of water and set aside to let them absorb the moisture. Do the same for the mashed avocados.
