Add 3/4 cup lukewarm water, 3/4 tsp salt, 1 1/2 tbsp sugar, and 1 tsp yeast to a large bowl. Mix well until thoroughly combined. Next, add 2 tbsp + 1/2 tsp softened butter, and 2 1/4 + 1 tbsp loosely packed all-purpose flour. Mix until the consistency becomes doughy. After this, transfer the dough to your working surface and knead until soft. Once done, shape it into a ball and divide it into six equal parts. Then, shape each piece into a ball. Cover these dough balls with a damp kitchen towel while you work on your first dough ball.

Roll out the dough ball into a rectangular sheet, roll it into a thin log, then pinch the edges and turn both sides. Gently press on top to slightly flatten it, then place it into a greased and lined baking sheet. Repeat these steps until you shaped all the dough balls. Once done, take a knife greased with butter, then deeply slash the center of the dough, leaving half an inch of space on both ends. After this, cover them with plastic wrap and leave them to proof for 60 to 70 minutes. In the meantime, chop the parsley and garlic, then shred the mozzarella cheese and set them aside.
Once the dough has done proofing, you can brush them with an eggwash to make the crust browner when done baking (optional). Now, sprinkle some sesame seeds, then divide the shredded cheese and chopped garlic, and parsley on each top. Place them in the oven at 350 degrees F and bake for 18 to 20 minutes.
