Our breakfast at home is extra special because of this homemade mini quiche recipe by Evolving Table. What we love most about this recipe is that you can customize it however you like. You can choose from bacon, ham, sausage, mushroom, bell pepper, chives, or any topping you like. It’s super easy and quick to prepare and just delicious.

Add 5 eggs, 1 cup of milk, 3/4 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of garlic powder in a large bowl with a spout or in a measuring cup. Whisk until well combined then refrigerate until ready to use.
Lightly flour your cutting board, then roll out the dough until the diameter is at least 12 inches. Cut 24 circles from each sheet of pie crust using a 2 1/2″ round cookie cutter. Re-roll the dough about 3 to 4 times.
Generously spray a mini muffin tray with a non-stick spray, then press pie crusts into the bottoms. Press to the sides so the crust completely covers each cup.
Fill one tablespoon of your preferred add-ins and a sprinkle of cheese into each pie crust. You can choose whatever meat or vegetables you like.
Pour the egg mixture and fill each pie crust. Make sure not to overfill it. Mix together all the add-ins and cheese using a small spoon.
Place inside the oven and bake at 375 for about 20 t 22 minutes, or until the pie crust is golden and the egg is cooked.
Once done baking, remove from the pan, sprinkle fresh herbs on top, then serve immediately. Enjoy!
