Preheat your oven to 350 degrees F. Next, add a little bit of olive oil to a preheated pan, then add the chopped onion and 3 cloves of chopped garlic. Saute until fragrant. After this, add the lean ground beef and cook for four to five minutes, just until the meat browns. Now, season with 1 tsp of cumin and some salt, and ground black pepper to taste. Mix, then add 1/2 cup of corn kernels. Turn off the heat and set aside. Next, add 1 cup of tomato sauce to the bottom of the casserole dish and spread evenly. Set aside while you assemble the tortilla wraps.

Lay the tortilla wrap on a surface, then add 3 to 4 tbsp of the ground beef mixture in the middle. Add some chopped tomatoes and grated cheddar cheese on top. Now, fold the edges towards the center, press down around the filling, and roll. Place it in the prepared casserole dish. Repeat these steps to make more tortilla wraps. After this, drizzle some more tomato sauce on top and more grated cheese. Place the casserole dish in the preheated oven and bake for 20 to 30 minutes. Once done baking, garnish with some chopped cilantro and serve.
