Step 1

To determine if your eggs are fresh, you need to check the air pocket. Fresh eggs have a very little air pocket and when it’s stale, there’s a lot. To check if there is very little air in the air pocket, the egg should sink into a glass full of water in a horizontal position. If the egg is not so fresh, it will slightly tilt into a semi-horizontal position at the bottom of the glass. And if the egg is stale, it will just float in a vertical position when you try to sink it.

Step 2

Now, if the eggs are broken, the fresh egg would have a plump yolk and a gelatinous ring of white that surrounds the yolk and another ring of white. When it’s not so fresh, the yolk in the middle looks slightly flat, the double ring is not so visible, and the white is watery. When the egg is stale, the yolk is very flat and just watery white.
