You’re in for a treat with this loaded baked potato casserole by Rachel cooks with love. The crispy bacon and melted gooey cheese on top are just fantastic. It’s the perfect side dish or even a main course when you add your chosen meat. Read on or watch the video below for full instructions.

Clean the potatoes and scrub them to remove all the dirt. Once done, make holes using a fork, then rub some oil on the skin. Sprinkle some kosher salt and pepper on all sides. Place them on the rack and bake at 400 Fahrenheit for about an hour.
Place a pan over medium heat. Add the bacon and cook until nice and golden brown. Turn off the heat and transfer to a plate lined with a paper towel.
Cut the potatoes into pieces and place some on a casserole dish. Push them down a little bit. Set aside and let them cool for just a minute.
In a bowl, add some sour cream and mayonnaise. Mix until well combined, then add to the potatoes. Make sure to spread it evenly. Sprinkle garlic powder, pepper, chopped green onions, and bacon on top.
Sprinkle the grated sharp cheddar cheese on top, then add another layer of potatoes and repeat the process all over again, adding all the remaining ingredients.
Place it inside the oven and bake at 350 degrees Fahrenheit for 30 minutes covered with foil.
Once done baking, let it cool for a little bit and serve. Enjoy!
