These yummy oatmeal banana muffins by Preppy Kitchen are one of my favorite grab-and-go snacks. These were so easy to prepare and won’t even take you 30 minutes in the kitchen. It turned out so delicious, just how I wanted it to be. I am sure even the kids will love this. It’s moist, fluffy, and filling! Read on or watch the video below for full instructions.

Preheat your oven to 375F then line a 12-cup muffin tray with paper liners.
Combine 1 1/2 cups of all-purpose flour, 1 1/2 cups of rolled oats, 2/3 cups of granulated sugar, 1 1/2 teaspoons of baking powder, 1/2 teaspoon of baking soda, 1 teaspoon of ground cinnamon, and 1/2 teaspoon of salt in a large bowl using a whisk.
Get a medium bowl and add 2/3 cup of milk, 1/3 cup of vegetable oil, 2 large eggs, and 1 teaspoon of vanilla extract. Whisk them all together then add the mashed banana. Next, pour the milk mixture into the oat mixture and mix until well combined. After that, stir in the chocolate chips. Divide the batter among the paper liners. Add extra oats and cinnamon if desired.
Place inside the oven and bake for about 18 to 22 minutes or until golden brown and the centers feel firm. After baking, let the muffins cool in the pan for a few minutes, before removing and placing into a wire rack to cool completely.
