My family absolutely loves these super fluffy banana pancakes by Breakfast For One. They always ask me to cook it for them every week. We all like the sweetness of the banana and the cinnamon flavor! It’s soft, creamy, and buttery – definitely a good choice for your first meal.

Melt 2 tablespoons of unsalted butter in a microwavable bowl. Once melted, let it cool to temperature.
Add 1 ripe banana in a bowl and finely mash with a fork or potato masher. Next, add the melted butter, 3/4 cup of buttermilk, 1 egg, and 1/2 teaspoon of vanilla extract. Mic thoroughly until well combined.
Place a sifter directly into a large bowl. Sift 1 cup of all-purpose flour, 1 tablespoon of sugar, 2 teaspoons of baking powder, 1/2 teaspoon of cinnamon powder, and 1/4 teaspoon of salt to remove any clumps. Mix with a whisk.
Pour the wet ingredients into the dry ingredients. Gently mix until no flour streaks remain. Make sure not to over-mix. Some lumps in the batter are fine. Let it rest for about 10 minutes.
Place a skillet over medium heat. Lightly brush it with melted butter. Pour 1/3 cup of the batter onto the pan and cook until bubbles rise and the edges look dry for about 2 minutes. Flip and cook the other side for another minute or until golden brown. Repeat with the remaining batter.
Top a stack of pancakes with softened butter and drizzle warm maple syrup. Serve with sliced bananas and some berries of your choice. Enjoy!
