I absolutely love Olive Garden’s salad and dressing. We usually buy them from the grocery store, but I wanted to make it using fresh ingredients at home. Luckily, I found this copycat recipe by The Stay At Home Chef. I can say that this is definitely better than the store-bought ones! It has a smooth and zesty flavor that is just spotless. In a mixing bowl, combine 1/3 cup of lemon juice, 1/3 cup of red wine vinegar, 1/2 cup of mayonnaise, 1 tablespoon of extra virgin olive oil, 1 teaspoon of dried parsley, 1 teaspoon of dried basil, 1/2 teaspoon of dried oregano, 1/2 teaspoon of garlic powder, 1/4 teaspoon of salt and 2 tablespoons of grated parmesan cheese. Whisk all ingredients together until well combined. Once smooth, carefully pour it into a salad dressing container.
In a large salad bowl, add 4 to 6 cups of chopped romaine lettuce. Add the sliced red onion, tomatoes, kalamata olives, pepperoncini, and croutons. Next, sprinkle grated parmesan cheese and freshly cracked black pepper.
Pour the dressing into the salad, give it a toss, and serve. Enjoy!
If you are not going to serve it immediately, you can pour the dressing later.
