Instructions:
Step 1:
Crush Oreos and place them in a food processor. Pulse until pulverized. Add the melted butter and blend until well incorporated. Transfer to a pie dish and press into a thin layer. Place in the freezer until ready to fill.
Step 2:
In a medium pot, add 1 1/2 cups of milk, cream, sugar, and salt. Mix and place over medium heat. Continuously stir until it simmers, then remove from heat.
Step 3:
In a large bowl, whisk yolks and set it aside. Take a different bowl and mix 1/2 cup of milk and cornstarch, then combine with the yolks. Pour it back into the pot.
Step 4:
Place the pot on medium heat and continuously whisk until it’s boiling. Lower the heat to medium-low and whisk for 2 to 3 minutes more before removing it from the heat.
Step 5:
Add chopped chocolate and vanilla into the pot, and stir until melted. Pour into the chilled crust and smoothen with a spatula. Chill in the fridge while making the ganache.
Step 6:
Make the ganache. In a medium bowl, melt the chocolate and cream in the microwave for a 20-second burst at 50% power. Stir until smooth, then pour over the filling. Smoothen the top and chill for at least 3 hours.
Step 7:
Before you serve the pie, mix the whipped cream, sugar, and vanilla in a stand mixer until thick soft peaks form. Spoon it over the pie and sprinkle chocolate shavings on top.
