Place a skillet over medium-high heat and add 2 tablespoons of olive oil and a little bit of butter. Once hot, add 2 tablespoons of all-purpose flour and whisk well.
Add minced garlic and continuously mix to avoid burning. Next, add the chopped onions and cook until translucent.
Add the four cups of corn and mix. Cook for about 4 to 5 minutes on medium-low.
Season the corn with 1/4 cup of sugar, 1 teaspoon of black pepper, 1/2 teaspoon of paprika, 1/2 teaspoon of Himalayan salt, 1/2 teaspoon of garlic powder, and 1/4 teaspoon of ground cumin. Mix everything until well combined. Cook for a little bit.
Mix 1/2 cup of evaporated milk, 1/2 cup of coconut milk, and 1/2 cup of heavy whipping cream in a bowl, then add to the corn. Stir everything and cook until thick.
Turn off the heat and top with one cup of shredded cheese on top. Mix and let it melt.
Serve and enjoy!
