Salad is the perfect dish to serve on the side of your favorite food because they make any meal so much better and more appetizing than they already are. But, they always have to be served fresh and you can’t make them much ahead of time or store them too long because they lose their crispness and freshness. This is the reason why I was so surprised and delighted at the same time when I found this video tutorial by Melissa Mir on YouTube which shows how to prepare a vegetable salad properly so that you can store them for as long as 1 year and you won’t be needing the help of any chemical to do this, too!

Ingredients:

  • 2 kg or 4.4 pounds of cucumbers
  • 1.5 kg or 3.3 pounds of tomatoes
  • 1.5 kg or 3.3 pounds of bell peppers
  • 2 chili peppers, optional
  • 700 grams or 1.5 pounds of onion
  • 2 bunches of parsley
  • 2½ tbsp of coarse salt

Directions:

Step 1

Slice and cut the cucumbers, tomatoes, bell peppers, hot peppers, onions, and parsley, then make sure to deseed the peppers and put all of the cut veggies in a large mixing bowl. Sprinkle the salt all over the veggies, then start tossing them together using 2 spoons until combined, and allow them to sit for about 30 to 40 minutes. Grab the jars making sure they are clean and dry, then scoop the veggies into each jar, and distribute the rendered juice in them equally. Place a piece of cloth or towel at the bottom of a large pot, then place the filled jars, and put the lid on each of them.

Step 2

Pour water into the pot, then place the pot on a stove over medium heat, and bring the water to a boil. Sterilize the jars for about 15 minutes from the start of boiling, then turn off the heat, and remove the pot from the stove. Remove the jars from the pot, then wipe them dry with a clean cloth or towel, then close the lids tightly, and allow them to cool down for about 20 to 24 hours while covered with a heavy or thick towel. Once done, you can now store it in your refrigerator for up to 12 months, and eat or use them whenever you want.
