Add 1 1/4 cups of sugar in a small saucepan. Place it over low heat. Do not mix it–just let it sit until it melts and becomes brown. The edges will be the first to brown.
Once browned, add the salted butter and mix constantly until it’s well incorporated. It should now have a caramel color and smooth texture. Do not stop mixing until you don’t have the right consistency.
Add the double cream and mix constantly for about 2 minutes. It should have a smooth texture.
Let it cool for a few minutes, then pour it into a bowl. Place it in the fridge for about 15 minutes.
After 15 minutes, remove it from the fridge. Whisk the caramel for about 15 seconds, then place in the freezer for about 10 minutes.
After 10 minutes in the freezer, whisk the mixture again until it changes color. It should become lighter and very creamy. Be sure not to over-mix it. You can use it as a spread, garnish for cake, or even toppings for a hot drink. Serve and enjoy!
