This easy and light chopped salad by Clean & Delicious is my absolute favorite. No recipe can top this one! The flavors and texture are just heavenly. Not only is it tasty, but it’s also packed with nutrients that are good for you. All the vegetables are finely chopped, so you can easily scoop them. It has broccoli, cauliflower, red cabbage, kale leaves, carrots, and parsley. To add some crunch, roasted almonds, dried cranberries, and sunflower seeds are added. To make your work easier, roughly chop the veggies into bite-size pieces then place them in a food processor. Blend until finely chopped. Do it for each vegetable. They should look like crumbs. Finely chop the parsley too.
Place all the chopped vegetables in a large bowl.
Add chopped almonds, sunflower seeds, and roughly chopped cranberries. Do not mix it yet. Set it aside.
Make the dressing. Add 2 cloves of crushed garlic, 1 tablespoon of minced ginger, 1/2 cup of lemon juice, 1 teaspoon of Dijon mustard, 1 teaspoon of honey, 1/4 cup of extra virgin olive oil, salt, and black pepper into a bowl. Whisk everything together until well combined.
Get the bowl of veggies and drizzle the homemade dressing. Toss everything together until well combined. Serve and enjoy!
