Ingredients:
- 12 oz Thai linguine rice noodles
- 1 lb ground pork (or any ground meat of your choice)
- 2 cups of chopped bokchoy
- 1 – 2 fresno chiles, chopped
- 1 onion, diced
- 1/4 cup green onion, chopped
- 3 – 4 cloves of garlic, minced
- 1/4 cup low-sodium soy sauce
- 1 – 2 tbsp hoisin sauce
- 1/4 tsp sesame oil
- 2 – 3 tbsp chili garlic paste
- 1 tsp ginger paste
- 1 – 2 tsp dark soy sauce
- 1 – 2 tsp crushed red pepper flakes
- 1 tbsp brown sugar
- 1/4 cup water
- salt, pepper, garlic, onion powder, to taste

Step 1
To start, prep and cut the veggies accordingly, then set them aside. Next, combine 1/4 cup of low-sodium soy sauce, 1 – 2 tbsp hoisin sauce, 1/4 tsp sesame oil, 2 – 3 tbsp chili garlic paste, 1 tsp ginger paste, 1 – 2 tsp crushed red pepper flakes, 1 tbsp brown sugar, 1/4 cup water, and 1 – 2 tsp dark soy sauce in a medium-size mixing bowl. Stir well to combine. (You can adjust the taste to your preference.)

Step 2
Next, heat some avocado oil in a large pan or wok over medium-high heat and add the diced onion, bokchoy, fresno chiles, and green onion. Cook until they softened up a bit, about three to five minutes. In the meantime, cook the noodles according to the package instructions. Back to the veggies, add 1 lb of ground pork. Mix well, then add the minced garlic. Season with salt, pepper, garlic, and onion powder to taste or all-purpose seasoning. Mix well until the meat is fully cooked, then add the cooked noodles and the sauce mixture. Toss around until the sauce is evenly distributed, then serve.
