I personally prefer decorating with them as they always bring so much character to the cake and make the colors pop out, but I also love munching on them. To start, slice your lemons as thinly as possible with a knife or a slicer. Set aside. Next, combine 1 1/2 cups water and 1 1/2 cups sugar in a large pan over low heat. Mix until the sugar is fully dissolved, then add 3 -4 drops of yellow gel food coloring.

When the mixture starts to simmer, add the sliced lemons. Let them cook for at least thirty-five to forty-five minutes. You will know that they are ready once they are turned into somewhat translucent. Transfer them to a sheet of baking paper and allow them to dry completely.
