Growing up, my mom always made icebox desserts: lemon, pineapple, lime, etc. But my favorite is the lime-flavored one. As I’m living on my own now, I rarely taste my mom’s cooking; that’s why I’m so thankful I found this icebox recipe from Simply Mamá Cooks on Youtube. When I first tried this recipe, I immediately got nostalgic as it tasted almost the same as the one my mom made growing up. It’s super creamy with a tangy taste from the lime, and the best part is it’s super easy to make. Now, it’s been my go-to dessert whenever I’m entertaining guests, and they always ask for the recipe. In a blender, add a 12 oz can of evaporated milk, 14 oz can of sweetened condensed milk, 2 tsp Mexican vanilla extract, 2 tsp lime zest, 4 oz softened cream cheese, and 1/3 cup lime juice. Blend it well. After this, start layering the 9 x 13 casserole dish. Add enough cream mixture at the bottom, then add a layer of the biscuits. Repeat this process until you’re done. (Make sure to spread the cream mixture well and if you’re using a 9 x 13 baking dish, you’ll use 15 to 18 cookies per layer).

After you finish layering the baking dish, cover it with a cling wrap and put it in the refrigerator for six to eight hours or overnight for best results. After chilling and letting the cake set, garnish the top with crushed cookies. Serve and enjoy!
