Nothing can surely beat this crispy cheese potato pie by Quick Simple & Delicious! The potatoes are so flavorful, and the melted cheese in the middle is just heavenly. It’s the perfect snack to eat any time of the day.

Peel the potatoes and cut them into fine slices. Place them in a bowl of water, then wash them well to remove the starch. Once done, drain the water.
Season the potatoes with salt, a pinch of black pepper, 2 tablespoons of parmesan, 1 teaspoon of paprika, 1o to 12 teaspoons of potato starch, and 1 teaspoon of dried parsley. Mix everything until everything is well coated. Set it aside for about 5 to 7 minutes so that the water comes out from the potatoes.
After 5 to 7 minutes, mix it again.
Drizzle some olive oil into a pan. Do not turn on the heat yet. Cover the bottom of the pan with the potatoes – each one overlapping the other. Now, turn on the heat to medium. When you hear the oil sizzle, place the lid and reduce the heat to low. Wipe off the moisture on the lid so the potatoes will be crispy. Cook for about 5 to 7 minutes.
Poke it with a toothpick to check if it’s cooked. Once it comes out clean, flip the potatoes and cook the other side for 2 to 3 minutes. Place on a cooling tray lined with a paper towel. Repeat the process for the remaining potatoes.
Sprinkle shredded mozzarella cheese on top of the potatoes in the pan, then place the other piece on top. Cook until the cheese is melted.
