For the sauce:

Season the chicken well with salt, pepper, oregano, and paprika on both sides.
Add vegetable oil and butter to a skillet. Once melted, add the chicken. Fry them for 5 minutes on each side until golden brown. Remove from pan then set aside.
In the skillet, add the chopped onion, then saute until soft. Add the potatoes and fry for 2 minutes. Next, add the carrots and cook for 7 minutes.
While the carrots are cooking, make the sauce. In a different pan, add the sweet chili sauce, soy sauce, lemon juice, honey, and Dijon mustard. Mix until well combined. Bring it to a boil, then continue to cook for about 2 minutes.
Add the chopped parsley and garlic to the vegetables. Fry them for about 1 minute, then put back the cooked chicken legs. Pour the sauce on top.
Place the skillet inside the oven and bake at 392F for about 25 to 30 minutes.
Once done, remove from the oven then serve with white rice, if preferred. Enjoy!
