Put the lentils in a blender or food processor, then add the water, and allow the lentils to soak for at least 3 hours. After a few hours, you’ll see that the lentils have swollen, then start to blend them until they are very smooth, and transfer them to a bowl. Season it with salt, then give them a good stir until well combined, and use immediately or allow them to chill in the refrigerator overnight. Once ready to cook, place a nonstick pan on a stove over medium-high heat, then allow it to heat up, and lightly grease it with olive oil letting it continue to heat up.

Next, scoop about ¼ to 1/3 cup of the batter (make sure to stir to combine if chilled), then pour it into the hot pan, and spread it out until 5 to 6 inches round using the bottom of a ladle or spoon. Lower the heat setting to medium, then allow the batter to cook for about 1½ to 2 minutes, and flip it over. Allow the other side to cook for about 2 more minutes, then transfer them to a plate, and continue to cook the rest of the batter. Cover the flatbread with a towel as you cook and stack them to keep them warm, then serve, and enjoy!
