These 3-ingredient chocolate-covered coconut bars by Baking Cherry taste like the original bounty bars! Who knew it was so easy to make? You can prepare tons of this, store them in the fridge, and get them whenever you want. It’s so delicious and addicting. The refreshing taste of coconut with chocolate is just incredible. In a big mixing bowl, add 2 and 1/2 cups of finely shredded unsweetened coconut and gradually pour 3/4 cup of sweetened condensed milk, mixing after every addition. Use a spatula to mix it well. You can add more condensed milk if necessary.
Line a 5″ by 7″ baking mold with parchment paper. Transfer the mixture to the mold. Press and flatten the top using a silicone spatula.

Place the mold in the freezer for about 1 hour to let it harden.
After an hour, remove it from the mold, then take off the parchment paper. Place on a plate or cutting board. Cut into small rectangles.
Slice the semi-sweet chocolate into small pieces and place in a heat-proof bowl. Melt in the microwave. You can also fill a saucepan with some water and bring it to a boil. Place the bowl on top (it should not touch the water). Lower the heat to simmer and melt the chocolate while stirring regularly.
Prepare a baking sheet or plate with parchment paper. Dip the coconut bars into the melted semi-sweet chocolate. Remove the excess chocolate by sliding it into the edge of the bowl and place on the parchment paper.
Once the chocolate has set, they are ready to serve. Enjoy!
