This fluffy egg tomato pizza by 쿠킹하루 Cooking Haru 🙂 will never disappoint you. If you love eating pizza like me, you should try this recipe. The egg base with tomato slices, green onion, parsley, and different kinds of cheese is incredibly delicious. It’s the perfect meal for breakfast, but you can also have it any time of the day. What I love about this recipe is that you can add different toppings that you prefer, like ham, bacon, or sausage. It’s so flavorful and worth the try. Crack 3 eggs in a bowl and beat well.
Place a pan over low heat, then add 1 tortilla.
Pour the egg mixture, then season with salt, pepper, and oregano. Sprinkle the chopped green onions, shredded mozzarella cheese, and cheddar cheese. Put another tortilla on top and cover it with the lid to let the eggs cook.
Remove the lid and add butter. Once the other side is browned and crispy, flip the tortilla.
Put the sliced tomatoes on top. Sprinkle salt, pepper, and oregano again, then add the mozzarella cheese slices. Grate more cheddar cheese on top if preferred. Sprinkle parsley on top.
Cover it with the lid and let the cheese melt.
Once melted, add butter to the bottom to make the tortilla crispier.
Transfer to your serving plate. Top it with basil, arugula, or spinach leaves. Slice and serve. Enjoy while warm!
