My family loves this recipe by The Raina’s Kitchen so much. It’s the best chicken and vegetable stir fry we have ever tasted. It instantly became one of our go-to dishes because the flavors are phenomenal. Serve it with a bowl of rice, and you have the perfect meal. It’s tasty, healthy, and filling – definitely worth the try.
Ingredients:
- 3 lbs of chicken breast or thigh (cut into bites)
- 1 teaspoon of chicken season
- 1/4 teaspoon of salt
- 1/4 teaspoon of pepper
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
Sauce:
- 1/2 cup of sweet and sour sauce
- 3 tablespoons of oyster sauce
- 1 tablespoon of mushroom sauce
- 1 tablespoon of soy sauce
- 1/4 cup ginger wine or any white wine
- 1 teaspoon of garlic paste
- 1 teaspoon of ginger paste
- 2 tablespoons of cornstarch
Vegetables:
- 1 tablespoon of coconut oil
- 1 teaspoon of garlic paste
- 1 teaspoon of ginger paste
- 1/4 of red bell pepper – red, green, yellow (diced)
- 2 medium carrots (peeled and sliced)
- 1 medium sweet onion (chopped)
- 1/4 scotch bonnet pepper
- 2 stalks of green onion (chopped)
- 1 teaspoon of crushed red peppers

Instructions:
Step 1:
Sprinkle all-purpose seasoning, salt, pepper, onion powder, and garlic powder. Drizzle a little bit of oyster sauce. Mix until well combined. Set it aside and let it marinate for about 10 to 15 minutes.
Step 2:
In a small bowl, add the cornstarch, sweet chili sauce, oyster sauce, mushroom sauce, soy sauce, ginger wine, garlic paste, and ginger paste. Whisk until well combined, then set aside.
Step 3:
Place a skillet over medium heat and add a little bit of oil. Once hot, add the marinated chicken. Fry until partially cooked for about 5 to 7 minutes. Transfer to a plate.
Step 4:
In the same pan, add the coconut oil, ginger, and garlic paste. Mix then add the carrots. Cook for about 5 minutes, then add sliced onion, bell pepper, and broccoli. Toss and cook for a little while.
Step 5:
Pour the sauce into the vegetables and mix until everything is well coated.
Step 6:
Put back the chicken and mix it with the vegetables. Add the chopped green onions and crushed red peppers. Mix, cover with a lid and let it simmer for 5 minutes.
