Add 6 cups of water, 8 cups of chicken broth, and 1 tablespoon of sea salt into a large pot. Bring it to a boil, then put the chicken thighs in. Let it boil partially for about 20 minutes. Skim off any foam that rises to the top of the soup.
Place a large skillet over medium or high heat, then add 2 tablespoons of olive oil, chopped onion, and celery. Saute until softened, then transfer to the pot.
Add the pasta and sliced carrots to the pot and cook for 15 minutes at a low boil.
Remove the chicken things from the soup and shred them using forks or your hand. Discard any bones and fat. Once done, put back the shredded chicken into the pot.
Season the soup with 1 teaspoon of your favorite seasoning and more salt. Make a taste test and adjust seasonings if needed. Press 1 garlic clove and add 3 tablespoons of dill into the soup. Mix and remove from heat. Enjoy while still warm.
