This classic French potato recipe from Recipe30 on Youtube has become a staple in my home-cooking meals. Instead of the traditional mashed potatoes, I make these potato swirls, and it was a total hit to the family. It’s super easy and fun to make and tastes just like mashed potatoes – just better!

Ingredients:

  • 2 lb potatoes
  • 3 eggs (yolks)
  • 3 oz melted butter
  • 1/2 tsp nutmeg (fresh or ground)
  • salt and pepper
  • olive oil (or vegetable oil)

Directions:

Step 1

Peel and rinse the potatoes, then cut them into three. Place them in a saucepan and add cold water, covering them. Cook until the potatoes are very tender. Once they’re cooked, place them in a bowl and mash them. Add melted butter to the mashed potatoes followed by three egg yolks, salt, ground pepper, and ground nutmeg. Mix well, then transfer the mixture into a piping bag with a large star nozzle tip.

Step 2

Grease a sheet pan with some olive oil, then pipe the mixture into the sheet pan. Place it in the oven at 430 degrees F and bake for 15 to 20 minutes.
