I always order egg bites whenever I crave them and recently it has become more often, that I thought maybe I can try making it at home! It looks easy enough to make and it would save me a lot of money and time. There was a lot of version and recipes available online but what caught my attention was this one by The Anthony Kitchen on YouTube. The process was so simple, the ingredients are easy to find and most important of all, the result was super delicious.
Step 1
Fill a baking dish or casserole with water about halfway, then place it on the lower third rack of the oven, and place another oven rack in the center. Preheat the oven to 300°F, then let it create steam in your oven and then grease a silicone muffin pan with cooking spray or line a muffin pan with paper liners before greasing them with cooking spray. Slice the bacon into small bits, then place a large frying pan on a stove over medium-high heat, and stir the bacon bits around letting them cook for about 6 to 8 minutes or until nice and crispy. Remove the bacon bits and transfer them to a plate lined with paper towels to drain off all the excess oil before setting them aside.

Step 2
Next, in a blender, add the eggs, cottage cheese, Gruyere, Monterey Jack, and salt, and blend them all together over medium-high speed for about 15 to 20 seconds. Divide the bacon into the muffin cups evenly, then pour the egg mixture on top of them filling them with about ¾ of the way, and place them in the oven. Let them bake for about 28 to 32 minutes or until the entry of the egg bites has reached a temperature of 165°F, then remove them from the oven, and allow them to cool slightly before serving. Enjoy!
