Ingredients:

  • 3 pounds sweet onions, thinly sliced
  • 4 tbsp unsalted butter, melted
  • 2 tsp brown sugar
  • 2 tsp sherry vinegar
  • 1 tbsp Worcestershire sauce
  • 5 sprigs of fresh thyme
  • 3 bay leaves
  • 6 cups beef stock
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 12-ounce French baguette, sliced
  • 2 cups Gruyère cheese, shredded

Directions:

Step 1

Slice the onions thinly, then add them to the slow cooker, and add the butter, brown sugar, a teaspoon of salt, sherry vinegar, and Worcestershire sauce. Cover it with the lid, then let it cook over a high setting for about 8 to 9 hours or over a low setting for about 12 to 14 hours until nicely browned and caramelized, and make sure to stir them well halfway through the cooking process.

Pour the beef stock, then season it with salt and pepper, and add the thyme sprigs and bay leaves. Cover it again with the lid, then continue to cook over a high setting for about 2 to 3 hours or over a low setting for about 4 to 5 hours, and once done, remove the thyme sprigs and bay leaves. Preheat your oven to broil and place the baguette slices on a baking sheet.
