Ingredients:
- 4 tablespoons of melted butter
- 1/2 cup of yellow onion (finely diced)
- 1 packed tablespoon of finely chopped garlic
- 1 cup of chicken stock (low sodium if preferred)
- 2 medium carrots (peeled and sliced thinly)
- 1 teaspoon of seasoned salt
- 1/2 teaspoon of paprika
- 1/2 teaspoon of black pepper
- 4 cups of cubed Yukon gold potato
- 6 cups of broccoli (large pieces)
- 1/2 teaspoon of celery seed
- 3 cups of whole milk (cold)
- 6 tablespoons of cornstarch
- 17 oz can of crema (light cream/table cream)
- 3 cups of freshly grated American block cheese
- salt to taste
For garnish:
- crispy bacon
- cheese
- a dollop of sour cream

Instructions:
Step 1:
Add four tablespoons of melted butter and half a cup of finely diced onion in a large pot. Let it cook for four to five minutes. Next, add the garlic and cook for one minute until fragrant.
Step 2:
Add four cups of chicken stock, followed by the carrots. Bring it to a boil. Once boiling, bring it down to a simmer for about five minutes.
Step 3:
Add the seasoned salt, paprika, and fresh black pepper. Mix and add the diced potatoes. Cook for about five minutes.
Step 4:
Add the broccoli and celery seeds to the pot. Place the lid and cook until the potatoes and broccoli soften for about fifteen minutes over low heat.

Step 5:
In a different pot, add three cups of whole-fat milk and six tablespoons of cornstarch. Whisk until well combined. Next, add one can of crema or table cream. Stir well with a whisk. Place over heat and cook until it thickens. Once it’s boiling, it will continue to thicken. Let it bubble for a few minutes and it’s done. Make sure to keep on stirring for the whole process so it will not burn. Next, add the cheese and continue stirring until melted.

Step 6:
Pour the cheese into the soup and mix well.
Step 7:
Serve in individual bowls and garnish with bacon, cheese, and sour cream. Enjoy!
