Pour some olive oil into a big pot and turn the heat to medium. Using paper towels, pat the beef dry then season with salt and pepper on both sides. Sear the beef until browned on all sides. Cook in batches in needed. Make sure you don’t overcrowd the pot.
Move the beef to the side and add the onion, celery, and carrots. Saute the vegetables for about 5 minutes then add the garlic. Cook for a minute more.
Pour the red wine and turn the heat to high. Reduce it by half for about 2 minutes and scrape the bottom of the pot to remove the browned bits using a wooden spoon.
Add the beef broth, Worcestershire sauce, thyme, and the beef back into the pot. Let it come to a boil. Once it’s boiling, lower the heat and let it simmer for about 45 minutes with the lid partially covered.
Add the barley and simmer until tender for about 45 to 60 minutes. Once it’s tender, remove the pot from the heat.
Taste and adjust the seasonings if needed. If the soup is too thick, you can add more water or extra low-sodium beef broth to thin it. Serve in individual bowls and garnish with parsley. Enjoy!
