Step 1
After washing and peeling off the potatoes’ skin, cut off the uneven parts, and then cut them into thick strips or cut them thinner if you want them to be crispier. In a large mixing bowl, add the potatoes, then pour cold water over them until covered, and let them soak for about 30 minutes. After half an hour, drain off all the water, then wash all of the excess starch away with cold water, and strain off all the water before setting them aside. Place a pot on a stove over medium to medium-high heat, then pour water enough to cover all of the potatoes, and bring it to a boil.

Once boiling, add the potatoes, then add salt, and let them continue boiling for about 5 minutes (if the potatoes are cut thinly, boil them for only 3 minutes). Strain all of the water away, then rinse the potatoes immediately with cold water to cool them down quickly, and transfer them to a baking sheet lined with a clean cloth to drain all of the excess moisture. Pat the potatoes dry with a paper towel, then transfer them to a plastic bag, add cornstarch, close the bag, and shake them gently until well coated. Shake off the excess powder, then transfer them to a container with a lid, put them in a freezer, and fry them whenever you want.

Place a deep pan on a stove over medium-high heat, then melt the unsalted butter, add the flour, and stir-fry for a few minutes. Add the sriracha sauce and milk, then give them a good stir, and add the cheese little by little stirring consistently after every addition until melted. Place a pot on a stove over low heat, then preheat the oil, and start putting the potatoes in batches. Let them cook for about 3 minutes, then remove them, and let them cool for a while before refrying them into the boiling oil again for another 3 to 4 minutes over low heat. Remove the crispy potatoes, then transfer them onto a wire rack to drain off all the excess oil, and let them cool. Serve along with the cheese sauce and enjoy!
