A little bit of spice surely makes any meal more delicious. Here’s the best spicy chicken stew recipe that I have ever tried. I always recommend this dish by Bluebell Recipes to my family and friends, as it’s always the crowd favorite at any gathering we have at home. Minced ginger, 8 cloves of garlic, and 1 ghost chili.
In a large pot, add 1/3 cup of olive oil and sliced onions. Saute for a few seconds then add the crushed garlic, chili, and ginger. Continue sauteing until the onions become slightly brown at the edges.
Add a splash of water and the chicken legs to the pot. Cook them over medium flame for about 3 minutes on each side. Place the lid and cook for another 5 minutes.
Mix the chicken and add 4 bay leaves, ground turmeric, roasted cumin and coriander seeds, sliced carrots, and baby potatoes. Mix until all ingredients are well combined. Place the lid back and cook over low heat for 15 minutes. Stir it in between.
Add the tomato paste, salt, and chicken stock. Mix until incorporated. Cook over medium flame with the lid on for about 30 minutes.
Season with black pepper and mix. Put back the lid and cook for another 5 minutes. Sprinkle chopped coriander leaves and stir. Serve and enjoy!
