Crack 2 eggs in a bowl and beat well. Next, add vegetable oil, milk, baking soda, and salt. Whisk until combined.
Add the flour and whisk until smooth.
Prepare the vegetables. Dice the bell peppers, onion, and tomato. For the parsley, olives, and green onions, slice them into small pieces. Next, grate the potato, then squeeze the juice and discard it. Once the shredded potato is squeezed, add it to the flour mixture along with the other veggies, feta cheese, and some cheddar cheese. Mix everything until well incorporated using a spatula or spoon.
Grease your round baking tray on the bottom and sides with 1 teaspoon of butter. Next, add 1 teaspoon of flour and shake it to spread.
Add the mixture to the prepared tray and flatten the top with a spatula. Sprinkle the remaining cheddar cheese on top. Place in the oven and bake at 356 degrees Fahrenheit for about 35 minutes.
Once done baking, let it cool for a few minutes then slice. Serve on a plate. Enjoy!
