This cake is filled with delicious dried fruits and nuts and has the right kick of rum. Upon serving to the table, this cake will be gone in just a few minutes, it’s that delicious.

Step 1
Put the dried fruits in a large mixing bowl, then pour hot water, and let them soak for about 10 minutes. After soaking, slice the dried fruits, then transfer them to a container, add the juice and rum, and then give them a good mix. Leave them for about 24 to 72 hours, then proceed to chop the nuts, and zest an orange over the sugar before proceeding to mix them together until combined. In a large mixing bowl, add the eggs, and sugar mixture, and whisk them together to combine. Add the vanilla extract, milk, and butter, then continue whisking until incorporated and well combined, and sift over the flour and baking powder.

Give them a good whisk before adding the dried fruits and nuts, then continue to mix until combined, and set it aside. Grease the baking pan or loaf pan and brush it with butter, then transfer the cake batter spreading it evenly, and let it bake in a preheated oven at 180°C or 350°F for about 40 to 50 minutes or until a toothpick inserted at the center comes out clean. In a mixing bowl, add the chocolate and hot cream, then stir them around until melted and incorporated, and spread it over the cooled cake. Top it with more dried fruits, then sprinkle some desiccated coconuts, serve, and enjoy!
