Prepare 2 bowls – 1 medium-sized and 1 large-sized. Crack 6 eggs and separate the yolks from the whites. Place the yolks in the large mixing bowl. Set the whites aside.
Add 1/2 cup of sugar to the yolks and whisk them together until it becomes light, thick, and fluffy.
Place a small pot over heat. Add 2 cups of milk, 1 cup of heavy cream, a pinch of salt, 1/4 teaspoon of cinnamon, 1/4 teaspoon of cloves, and 1/4 teaspoon of nutmeg. Stir until well combined, then bring it to a simmer. Once done, turn off the heat.
Slowly pour the hot milk mixture into the eggs while continuously whisking. Pour it back into the saucepan and cook over low heat. Stir frequently until the mixture begins to slightly thickens or until it reaches about 160 degrees Fahrenheit. Once done, remove from heat.
Add 1 teaspoon of vanilla extract to the mixture and 1/4 cup of Cognac(or anything you prefer between the options, but this is optional). Whisk until well combined. Next, strain the mixture to remove any small particles.
Pour the eggnog mixture into a pitcher, bottle, or container. Place in the fridge and let it chill for at least 2 hours.
Serve in glasses and sprinkle some cinnamon on top for garnish.
