Peel all the potatoes and grate them into thin pieces. Place them in a bowl.
Season sliced potatoes with 1/2 teaspoon of pepper, 1/2 teaspoon of chili powder, and 1/2 teaspoon of salt, then add 2 tablespoons of cooking oil and 2 tablespoons of potato flour. Mix using your hands until all potatoes are fully coated with the ingredients.
Cover a rectangular mold with parchment paper on all sides. Make sure to put an allowance on the longer sides as you are going to fold them to cover the potatoes.
Place the potatoes one by one in the mold overlapping each piece. Continue placing the potatoes until the top of the mold, then cover with parchment paper.
Place in the oven and bake at 446 degrees F for about 1 hour.
Once done baking, remove from the oven and squeeze the potatoes by placing a flat heavy object on top covered in foil. Refrigerate for 3 hours with the heavy object still on top.
Remove the potatoes from the mold and take off the parchment paper. Slice it into thin pieces.
Pour a generous amount of oil into a pot, so you can deep fry the potatoes. Once the oil is hot, place the potatoes and fry for 15 minutes or until brown on the edges and crispy.
