Dice the onion and place it on a plate. Next, cut the broccoli florets from the stem and slice them into two. You can also add the stem instead of throwing it away. Slice the celery sticks into big pieces.
Pour some olive oil into a big pot, and add the diced onion. Cook until they are soft and slightly translucent. Next, add sliced broccoli and celery sticks. Give the vegetables a good mix.
Pour 33.8 oz of vegetable broth, then add the green peas. Mix all ingredients, then add the 3 pieces of bay leaves.
Place the lid on the pot and cook the vegetables for about 12 minutes.
Take the pot from heat and remove the bay leaves. Using a hand mixer, blend all vegetables until it becomes smooth.
Place the pot back over heat, then add 1 teaspoon of balsamic vinegar. Season the soup with some salt and ground black pepper. Stir all ingredients well.
Add 8.8 oz of soy cream and sprinkle chopped parsley. Stir the soup.
Slice the tofu into small pieces and cook in a pan until brown.
Scoop some soup into a bowl then add cooked tofu. Sprinkle some more chopped parsley on top. Serve and enjoy!
